Simply Amazing Waffles

Tuesday, June 29, 2010 at 10:00AM Waffles are a strange beast. Most households don't have the ability to make more than one at a time. And even if they do, they rarely have two of the same kind of waffle maker. It's either standard thin waffles, or thick belgian waffles. And similarly to pancakes, most people make waffles from some sort of multipurpose mix.
Well, no more. These waffles have the same active prep time as a standard waffle mix, but you do need to start these the night before. It's worth it. First, meet the cast.

Ingredients:
2 cups (230 grams) flour
2 cups (460 g) milk
8 tbsp (115 g) melted, and cooled, butter
1/2 tsp instant yeast
1 tbsp sugar
1/2 tsp salt
1/2 tsp vanilla extract
1 tsp cinnamon
2 eggs
The night before: mix the dry ingredients, including the yeast.

Now stir in the milk, butter, and vanilla, and stir until it is a loose mixture. Cover it, and let it sit out overnight. I promise you this will be fine. You're using pasteurized milk products, and you'll be cooking it all anyway.
The next morning, you'll see the mixture looking all bubbly like this.

Heat up of the waffle iron, and brush on some vegetable oil, if you have a brush. Now, separate the eggs, mix in the yolks with the batter and beat the whites to soft peaks. Then fold in the egg whites into the batter.
Pour or ladle the batter on to the iron and get these beauties.

These waffles are packed with flavor. They have flavor coming out of every pocket and ridge. This recipe will make about 8 waffles, and they freeze like champs. Just pop them in the toaster and they're as crispy and delicious as they were when the first came out of the waffle iron.
