Peanut Butter

This is one of the most absurdly easy recipes I've done for the site. So easy. So very easy.

Start with peanuts and honey in a food processor.
 Pulse it a few times to get everything fine.

Now switch it to on and drizzle in oil until it's fluid.

Once you've got a fluid mixture, keep on blending until it's the level of crunchiness you desire. It'll be 90 seconds or more to smooth peanut butter.

It'll last a good long while in the fridge, just put it in a nice, tight, container.

Ingredients:

325 grams of peanuts

35 grams of honey

Oil (vegetable or peanut) as needed

Procedure:

1. Combine peanuts and honey in a food processor and pulse until fine

2. Turn food processor to "on" and drizzle in oil until the mixture is fluid

3. Continue to blend until you've reached the desired level of smoothness.

I've made my own peanut butter for some time, and just made some more yesterday. You don't need to add any oil though. If you put roasted peanuts into a food processor they'll go through a couple of phases: first they'll get chopped and then powdery. Then the powder will clump up a bit. Finally, the nuts will get warm enough to exude their oils and you'll get butter. This takes from 10-15 minutes (less if you've just roasted the peanuts and they're already warm) and requires no intervention. My recommendation for crunchy peanut butter is to pull out a 1/4-1/2 cup of chopped nuts early in the process and mix them back in after butter is formed.

Thanks for the tip, Alan. Any specific brand of roasted (or raw) peanuts you recommend? Oil content of the peanuts will vary between types of peanuts.

As for your method, I'm going to have to just take your word for it. My food processor is second hand, and I worry about it exploding if I tried to use it for 15 minutes straight.
